Virgin olive oil is pure olive juice obtained through centrifugation processes and is not subjected to refining processes.
With a fluid texture at room temperature, virgin olive oil is an oil with a uniform appearance and a much more bitter and spicy taste thanks to the antioxidants and polyphenols it contains. It has a maximum acidity of 2ºC.
Thanks to its characteristics, virgin olive oil is ideal for use in dressings, mayonnaise and other sauces and in frying, since it degrades less at high temperatures than other oils.
