Extra virgin olive oil is pure juice from top quality olives at their optimum point of ripeness. It is obtained through centrifugation processes and is not subjected to refining processes. It is the highest quality oil, in which the organoleptic and nutritional properties of the olives remain intact.
With a fluid texture at room temperature, extra virgin olive oil is an oil with a uniform appearance and an intense, spicy flavour thanks to the antioxidants and polyphenols it contains. It has a maximum acidity of 0.8ºC. It has a high oleic acid content.
Thanks to its characteristics, extra virgin olive oil is ideal for use in dressings and for preserving food, thanks to its antioxidants. Also, thanks to its properties, it is used in the cosmetics industry.
